A Quality Base Wine
Cuvée Zéro starts with a Chardonnay wine made from grapes grown organically on the estate. A true estate wine, before transformation.
Gentle De-alcoholization
Alcohol is removed through a two-step process, at room temperature: the wine's aromatic matrix is first protected, then the alcohol is separated. The result: no heating, no cooked taste, preserved fruit. As de-alcoholization does not allow for certification to be maintained, the finished product is not organic.

Expertise
A real wine, without the alcohol
Making a good alcohol-free wine means first making a good wine, then removing its alcohol without mistreating it. The Cuvée Zéro is dealcoholized using a gentle two-step process, carried out at ambient temperature: the aromatic signature of the Chardonnay is protected, the alcohol is separated from the rest, then the aromas are reunited with the dealcoholized wine. No harsh heating, no cooked notes. The fruit and freshness remain intact. It is this demand, invisible in the glass but decisive on the palate, that separates a true alcohol-free Chardonnay from a simple grape juice.
The Estate
An estate in the Gard since 1928
Château des Coccinelles is not some superficial brand. It is a family estate founded in 1928 in Domazan, in the Gard region, with a long-standing commitment to viticulture that respects living things. The ladybug, which gives it its name, is the winemaker's helper, the ally of an agriculture that protects biodiversity.
Cuvée Zéro starts with a wine made from these organically grown vines. Dealcoholization then removes certification from the finished product: we say it plainly, the grapes are organic, the bottle is not sold as an organic wine.
Tasting
Freshness and tension
The color is clear and bright. The nose reveals citrus notes, lemon and grapefruit, before a delicate hint of white flowers. The palate is lively, taut, carried by a mineral sensation and a clean finish that makes you want a second sip.
Let's be frank: without alcohol, a wine loses some body, as alcohol contributes to its substance. Cuvée Zéro doesn't pretend. It focuses on what Chardonnay offers best once the alcohol is removed: freshness, fruit, and drinkability. Serve between 6 and 8 °C.
Cuisine
Food & Wine Pairings
Served chilled, Cuvée Zéro stands out as an elegant and versatile white wine. As an aperitif, it pairs beautifully with sunny tapas and fresh cheeses. It shines with grilled fish, shellfish, and seafood, enhancing their delicate flavors.
Its crispness makes it a great match for Asian cuisine: sushi, ceviche, and ginger vegetable stir-fries. It also pairs well with summer salads, fresh goat cheese, and seasonal vegetables. And for those times when alcohol isn't an option, whether driving or before returning to work, it offers the pleasure of a drink without the constraint.

FAQ — Your questions about Cuvée Zéro
Is that really wine?
Initially, yes. We produce a Chardonnay wine according to the rules, then we remove its alcohol. It is this winemaking stage that separates Cuvée Zéro from grape juice, which has never fermented. This wine past is what gives it its complexity.
"Alcohol-free," what does that mean?
Cuvée Zéro is a dealcoholized wine: after vinification, the alcohol is removed to bring it under 0.5% vol, the threshold below which a wine can be labeled "alcohol-free". A residual trace remains, in no way comparable to the twelve degrees and more of a classic white wine. The exact alcohol content is indicated on the label.
Is this vintage organic?
The base wine comes from the estate's organically grown vines: the raw material is that of a true organic wine. However, the de-alcoholization stage does not, under current regulations, allow this certification to be retained on the finished product. We state this unequivocally: Cuvée Zéro starts with organic grapes, but it is neither sold nor certified as an organic wine.
How many calories?
17 kcal per 100 ml, which classifies Cuvée Zéro as a low-energy drink. By removing alcohol, which is very high in calories by nature, you get a much lighter glass than a classic white, without losing any of the enjoyment.
How to serve and store Cuvée Zéro?
Serve well chilled, between 6 and 8 °C. Drink young to enjoy its freshness. After opening, re-cork and keep refrigerated, consume within 2 to 3 days.
