Capacity

The pleasure of bubbles, without a drop of alcohol. Coccinelles Zéro Bulles is a non-alcoholic (0% vol.) sparkling Chardonnay from Château des Coccinelles, made from our Chardonnay then delicately de-alcoholized; carbon dioxide is then added to restore its sparkling character.

Pale and luminous color with fine bubbles, fresh nose of white fruits and citrus, lively and fruity on the palate.

Perfect as an aperitif, for a non-alcoholic toast. Serve well chilled (6-8 °C), ideally in a flute. 75 cl bottle.

Tasting Notes

Appearance: Clear and bright, with fine bubbles.

Nose: Lively citrus notes (lemon, grapefruit) and a delicate hint of white flowers.

Palate: Lively and taut, carried by fine bubbles and a mineral sensation, with a clean, very low-sugar finish. Alcohol-free, the body is intentionally light: the focus is on freshness and drinkability.

From organic grapes to non-alcoholic sparkling wine

A quality base wine

Coccinelles Zéro Bulles starts with a Chardonnay wine made from grapes grown organically by the estate. A true estate wine, before processing.

Gentle de-alcoholisation, then bubbles

The alcohol is removed using a two-step process at room temperature: the aromatic matrix of the wine is first protected, then the alcohol is separated. Food-grade carbon dioxide is then added to restore its effervescence. The result: no heating, no cooked taste, preserved fruit, and fine bubbles. Since de-alcoholisation does not allow for certification to be maintained, the finished product is not organic.

Grape variety

Chardonnay
From the estate's vineyards, chosen for its freshness and acidity, which can withstand dealcoholization without breaking down.

Service and Maintenance

Temperature: 6 to 8 °C, well chilled.

Glass: ideally a flute, to preserve the bubbles.

Drink: young, to enjoy its freshness.

After opening: re-cork, keep refrigerated and consume within 1 to 2 days.

Expertise

A real wine, now sparkling and alcohol-free

To make a good non-alcoholic sparkling wine, you must first make a good wine, then remove the alcohol gently, and then put the bubbles back in. Coccinelles Zéro Bulles is first dealcoholized using a gentle two-step process carried out at room temperature: the Chardonnay's aromatic signature is protected, the alcohol is separated from the rest, and then the aromas are reunited with the dealcoholized wine. Food-grade carbon dioxide is then added to recreate the effervescence. No harsh heating, no cooked notes. The fruit, freshness, and bubbles remain intact.

The Estate

A estate in the Gard since 1928

Château des Coccinelles is not some made-up brand. It is a family estate founded in 1928 in Domazan, in the Gard region, with a long-standing commitment to viticulture that respects living things. The ladybug, which gives it its name, is the winemaker's helper, an ally of agriculture that protects biodiversity.

Coccinelles Zéro Bulles starts with a wine from these organically grown vines. De-alcoholization then removes the certification from the finished product: we state it plainly, the grapes are organic, the bottle is not sold as an organic wine.

Tasting

Freshness, crispness, and fine bubbles

The color is light and bright, enlivened by fine bubbles. The nose unfolds citrus, lemon and grapefruit, before a delicate note of white flowers. The palate is lively, taut, carried by the effervescence and a mineral sensation, with a clean finish that makes you want a second sip.

Let's be frank: without alcohol, a wine loses a bit of body, as alcohol contributes to its substance. Coccinelles Zéro Bulles doesn't pretend otherwise. It focuses on what Chardonnay offers best once the alcohol is removed: freshness, fruit, drinkability, and bubbles that add zest. Serve between 6 and 8 °C, in a flute.

Cuisine

Food & Wine Pairings

Served chilled, Coccinelles Zéro Bulles stands out as an elegant effervescent drink, ideal for toasting. As an apéritif, it pairs well with sunny tapas and fresh cheeses. It shines with grilled fish, shellfish, and seafood, enhancing their delicate flavors.

Its liveliness makes it a great companion for Asian cuisine: sushi, ceviche, and ginger vegetable stir-fries. It also pairs well with summer salads, fresh goat cheese, and seasonal vegetables. And for times when alcohol isn't appropriate, such as when driving or before returning to work, it offers the pleasure of bubbles without the drawbacks.

FAQ – Your Questions About Ladybugs Zero Bubbles

Is that really wine?

Initially, yes. A Chardonnay wine is produced according to traditional methods, then its alcohol is removed before it is re-carbonated. This winemaking step distinguishes Coccinelles Zéro Bulles from a grape juice, which has never fermented. This winemaking past is what gives it its complexity.

"Alcohol-free," what does that mean?

Coccinelles Zéro Bulles is a dealcoholized wine: after vinification, the alcohol is removed to bring it under 0.5% vol, the threshold below which a wine can be labeled "alcohol-free". A residual trace remains, which is negligible compared to the twelve degrees and more of a classic white wine. The exact alcohol content is indicated on the label.

Where do the bubbles come from?

Once the wine is dealcoholized, food-grade carbon dioxide is added to restore its effervescence, as is the case for many non-alcoholic sparkling beverages. The result: fine bubbles and a mouthfeel similar to a classic sparkling wine.

Is this vintage organic?

The base wine comes from the estate's organically farmed vineyards: the raw material is that of a true organic wine. However, the dealcoholization step does not currently allow, under regulations, for this certification to be maintained on the finished product. We state this plainly: Coccinelles Zéro Bulles starts with organic grapes, but it is neither sold nor certified as an organic wine.

How many calories?

17 kcal per 100 ml, which classifies Coccinelles Zéro Bulles among low-energy drinks. By removing alcohol, which is very high in calories by nature, you get a much lighter drink than a classic sparkling white wine, without losing any of the pleasure.

How to serve and store Ladybugs Zero Bubbles?

Serve well chilled, between 6 and 8 °C, ideally in a flute to preserve the bubbles. Drink young to enjoy its freshness. After opening, re-cork and keep refrigerated, consume within 1 to 2 days.
